6 slices of bacon, chopped
6 large eggs (plus one extra if you’d like to do an egg wash)
1 pack of puff pastry, thawed
1/2 cup shredded cheese (cheddar or your favorite)
Sprinkling of feta (optional)
Pesto (2-3 tablespoons)
Salt and pepper to taste
Fresh chives or parsley for garnish (optional)
Directions
- Preheat your oven to 375°F (190°C). Grease a pie dish with cooking spray or butter.
- In a frying pan or skillet, cook the bacon until it turns crispy and golden brown. Once cooked, remove from the pan and let it cool. Crumble or chop the bacon into small pieces.
- In a bowl, crack the eggs and give them a light whisk. Season with salt and pepper.
- Roll out the puff pastry and line the bottom and sides of the prepared dish. Trim any excess pastry.
